Healthy Mushrooms
Contrary to popular belief, edible mushrooms are often more nutritious than their vegetable counterparts, containing more essential amino-acids, proteins, minerals, vitamins and fiber. As well, there are many mushrooms that have been traditionally used to treat a wide range of illnesses, from upset stomachs to high blood pressure. Scientific research has now traced the multiple beneficial effects to bioactive components, notably various polysaccharides (primarily β-glucans).
