Grilled Huitlacoche

Ingredients4 ears of corn infected with corn smut (huitlacoche or Ustilago maydis) or the drained contents of a 325 g jar of Mexican
huitlacoche1 small onion, chopped
20 g unsalted butter (2 tbsp)
Juice of one lemon
Cayenne pepper, to taste
Salt, to taste
A bit of chopped cilantro, to taste
InstructionsUsing a knife, remove kernels from corn.
Melt butter in a hot pan. Add onions. Once they become translucent, add corn kernels. Stir regularly and cook for 8 minutes over medium heat.
Add the cayenne pepper and salt. Deglaze with the lemon juice. Serve and garnish with cilantro.
