Recipe created by Philippe de Vienne from Épices de cru.
Preparation time: 5 minutes
Cooking time: 4-6 minutes
Servings: 2-3
Ingredients
450 g (1 lb) sole fillets
60 ml (4 tbsp) butter
10 ml (2 tsp) magic blend ground
Salt to taste
2 lemon slices
Chopped chives (optional)
Preparation
Prepare the oven and fillets
Preheat oven to 230°C (450°F).
Pat the sole fillets dry with paper towels.
Place a sheet of parchment paper on a baking sheet.
Prepare the butter
Melt the butter in a small saucepan or in the microwave.
Using a brush, spread a little melted butter on the parchment paper.
Season and bake
Place the sole fillets on the parchment paper. Brush a little butter on each fillet.
Season the fish with the magic blend and salt. Place the lemon slices on top.
Bake for 4 to 6 minutes depending on the thickness of the fillets: the edges of the fillets will start to curl when the fish is done.
Serve
Pour the remaining melted butter over the fillets.
Garnish with chopped chives or other herbs, according to your preference.
Serve immediately with vegetables or a salad.
