Shaggy Mane Salad with Coriander and Parmesan

    Ingredients
    400 g young white shaggy manes
    6 tsp lemon juice
    ¼ cup olive oil
    ¼ of a bunch of coriander, freshly chopped
    75g grated parmesan
    Salt and pepper

      Preparation
      Delicately clean the shaggy manes (a brush for mushrooms works best).
      Slice the shaggy manes and place in a bowl.
      Pour the lemon juice evenly over the mix and stir gently.
      Add salt, pepper, oil and coriander.
      Stir gently.
      Just before serving, add the parmesan.
