Shaggy Mane Salad with Coriander and Parmesan

Ingredients

  • 400 g young white shaggy manes
  • 6 tsp lemon juice
  • ¼ cup olive oil
  • ¼ of a bunch of coriander, freshly chopped
  • 75g grated parmesan
  • Salt and pepper

Preparation

Delicately clean the shaggy manes (a brush for mushrooms works best)

Slice the shaggy manes and place in a bowl. Pour the lemon juice evenly over the mix and stir gently.

Add salt, pepper, oil and coriander.

Stir gently.

Just before serving, add the parmesan.
