Sweet Tooth stir fry with cilantro
Cooking: 20 minutes
800 g Sweet Tooth or Hedgehog
30 g butter
1 tbsp olive or canola oil
3 garlic clove
10 g ginger
1 bunch cilantro
Salt & pepper
Cut Sweet tooth in half, Hedgehog in quarter.
Sweat in butter and oil in a casserole over moderate heat for 15 minutes.
Add lemon juice, chopped garlic, ginger and cilantro.
Add salt and pepper.
Cook a few more minutes, adding water if needed.
Optionally, add cream.
Split in four bowls and warm berfore serving.
