Organic Japanese Miso
With Ganoderma lucidum, the now famous Reishi !
Our 3-4 year-old Japanese style miso is prepared with our barley and/or oats or rice miso that undergoes a third fermentation with the addition of unique ingredients: 5 varieties of Canadian algae (nori, dulse, kombu, alaria and kelp), 3 varieties of organic mushrooms (shiitake, reishi and maitake), and herbs and spices that lend an oriental taste and flavor of the sea. Japanese style miso has functional qualities superior to any other miso:
One portion provides 1/3 of the daily requirement of iodine. Iodine contributes to the normal thyroid gland.
The combination of the 3 mushrooms gives it an antioxidant value 5 times greater than other misos, which are already well endowed with them.
The presence of algae increases the content of miso in chelating agents (dipicolinic acid, in particular), these compounds which promote the elimination of heavy metals and radioactive ions through normal channels.
