Mushroom French Omelet

Ingredients

227g fresh white button mushrooms sliced, or 30g of dried button mushrooms (or other Agaricus mushrooms)
4 garlic cloves, finely chopped
1/4 bunch of parsley or chives, chopped
1 1/2 tbsp olive oil
1 1/2 tbsp butter
6-8 eggs
Black pepper & salt to taste
Umami salt (optional)

Preparation

Cook the Mushrooms :

If using dried mushrooms, soak them in lukewarm water for at least 30 minutes before cooking, then drain well.
In a skillet on medium-high heat, cook the mushrooms in butter and oil for 2 minutes.
Add the chopped garlic and cook for another 5-10 minutes.
Add parsley or chives.

Cook the Omelet :

Crack the eggs into a bowl. Season with salt and pepper, or use umami salt. Beat well.
Pour the beaten eggs into the hot pan with the mushrooms.
Using a fork or spatula, constantly stir the eggs, scraping the sides of the pan for even cooking. Cook until the eggs form creamy curds (about 1-2 minutes). Let it set for 30 seconds without stirring.
Tilt the pan and fold one side of the omelet over the other.
Lower the heat and let cook for a minute.
Carefully flip the omelette onto a plate.
Serve with a piece of freshly toasted bread.
