Sauteed White Button Mushrooms in Miso Glaze

Ingredients

227g whole white button mushrooms (the mini ones if possible)
2 tbsp water
1 tbsp white miso paste
1 tbsp unsalted butter, softened
1/2 tsp light soy sauce
1 tsp brown sugar 
1 garlic clove, chopped finely
1/4 tsp ginger powder
1/4 tsp crushed hot pepper
1 pinch white pepper
Sesame seeds and sliced green onion for garnish

Preparation

Prepare the Glaze :

In a small bowl, mix together all the ingredients except for the water and mushrooms.
Set aside.

Cook the Mushrooms :

Rinse and wipe mushrooms well to remove any residual dirt.
Heat skillet over medium-high heat, add mushrooms and 2 tbsp of water.
Cook for 5-10 minutes. Mushrooms will release water. Once almost all water is evaporated, stir in miso glaze and coat mushrooms well.
Continue to cook until glaze sticks well to mushrooms and they start to brown and caramelize, about 5 minutes.

Final Steps :

Garnish with sliced green onion and sesame seeds. Serve with white rice.
